Potato Soup - Jill H

1 cup sliced potatoes
1 1/2 cup chicken broth ( I use water and bouillon.)
1/2 cup chopped onion or a little onion powder
2 Tbsp butter or margerine
2 Tbsp flour
1/4 tsp salt
few dashes white pepper
1 cup milk

Combine potatoes, chicken broth, onion and any other vegetables you want to sneak in into the saucepan.  I generally blend up celery, carrots, and zucchini very fine and add.  Water should just cover the vegetables.  Boil until the vegetables are tender.  Blend the vegetable mixture until it is the consistency you like.  Add bacon pieces if you'd like.  Melt butter in another sauce pan.  Whisk in flour, salt and pepper.  Add milk all at once.  Cook and stir until mixture is thick and bubbly.  Stir into the vegetable mixture.  Cook until heated through.
