Summer Vegetable Skillet Saute - Ginny H

2-3 small zuchhini
2-3 yellow squash
2 T olive oil
1 clove garlic- finely chipped
2-3 medium tomatoes cut in eighths
salt and pepper

cut zuchhini and yellow squash in half lengthwise then crosswise into 1/2 inch thick half moons.  saute in oil in large skillet over medium heat for 5 minutes.  add garlic; cook 3 minutes or until squash is crisp-tender and golden.  add tomatoes, salt and pepper.  cook, stirring 2 minutes to heat tomatoes
