Peanut Butter Cup Cookies - Chelsey J

1 cup flour
1/2 tsp. baking soda
1/8 tsp. salt
1/4 cup unsalted butter
1/4 cup vegetable shortening
3/4 cup peanut butter
1/2 cup packed brown sugar
1/3 cup granulated sugar
1 large egg
1 tsp. vanilla
2 cups peanut butter cups, cut into 1/2-3/4 inch pieces

Sift the flour, baking soda, and salt into a medium bowl and set aside. In a large bowl, beat the butter, shortening, peanut butter, brown sugar, and granulated sugar until smoothly blended and the color has lightened slightly, about 1 minute.  Mix in the egg and vanilla, about 1 minute.  On low speed, add the flour mixture, mixing just until it is incorporated. Use a spoon to mix in the peanut butter cups. Drop heaping tablespoons onto baking sheet. Bake at 325 or till done.
