Carrot Cake - Melissa S

2 c sugar       
½ c oil           
½ c melted margarine
4 beaten eggs       
3 cups grated carrots   
2 c flour
1 tsp salt       
2 tsp b. soda       
2 tsp cinnamon
½ c semi-sweet chocolate chips       
½ c nuts (optional)

Preheat oven to 400.  Combine sugar, oil, margarine, and eggs.  Add grated carrots (or cheat and use the pre-shredded julienne carrots from the produce section).  Mix dry ingredients in and add the nuts and chocolate chips.  Pour batter into a pan lined with wax paper that has been lightly greased and floured.  Bake for 20-30 minutes.  Cool and frost with the cream cheese frosting (below)                           

Cream Cheese Frosting
2  8oz pkg of cream cheese, softened for 3-4 hours out of the fridge
2- 2 ½ c powdered sugar        1 tsp vanilla extract        1 tsp milk.

Cream all ingredients together until smooth and spread able.  Frost the carrot cake and keep refrigerated.
