1 lb. ground beef or turkey (we use turkey and you cannot tell the difference, just healthier)
1 pkg. taco seasoning (or 3 T. homemade taco seasoning)
2 chopped onions
40 oz. mixed canned, frozen or fresh veggies (add the juices from the cans; if you use mostly frozen or fresh veggies, add some water)
1 can tomato soup
1 can beans (Nick and I like black beans in this, but pinto and kidney beans work great too.)
1 1/2 tsp salt
Cook meat and onions. Add rest of ingredients. Bring to a boil, then simmer 15 minutes. Serve with tortilla chips, cheese and sour cream. Freezes very well. Works great if you make a double batch (I usually add an extra can of beans if I double the recipe). Makes about 10 servings.
