Amy's Fried Rice - Amy H

3-4 cups cooked rice
6 slices of bacon, chopped
3 eggs
3 tablespoons vegetable oil
2 teaspoons grated ginger root
2-3 cups chopped cooked chicken, pork, shrimp
***Whatever meat you want, or none…  left overs work well
8 green onions, chopped
1-2 tablespoons soy sauce

Prepare rice ahead of time.   Set aside.   Have cooked meat and other ingredients prepared and ready to go…

I use the biggest sauté pan I have or use a wok…

Cook chopped bacon until crisp, drain.  Keep 1 tablespoon of drippings in pan.  Beat eggs and pepper together.  Pour ½ egg mixture into pan, cook until done… like a large flat omelets…remove from pan and do again with second half of eggs.  Roll up egg “omletes” and slice into thin strips.  Set aside.

Add 1-2 tablespoons of oil to pan and stir fry ginger for 1 minute, over med-high heat.  Stir in rice.  Cook and stir for 5 minutes.  Stir in bacon, eggs, meat, onions and soy sauce.  Cook until hot throughout. 

You could add whatever vegetable to this as well…  peas, carrots, water chestnuts,
