Beef Stew - Amy H

2-3 lbs stew meat
1 tsp pepper
1 tsp salt
½ cup flour
2 Tbsp oil
1 onion, chopped
1-2 tsp garlic chopped
2  28 oz cans  crushed tomatoes
2 cans beef broth
1-2 Tbsp oregano
1 Tbsp sugar
1-2 Tbsp parsley
1 package green beans (frozen)
1/2 package ziti noodles

Mix flour, salt and pepper.  In large bowl mix flour mixture with stew meat.  Add oil to a large stew pot on stove, heat over med-high heat.   Add meat mix and chopped onionand garlic to pan.  Brown meat, scraping bottom of pan frequently.  After meat is brown, add crushed tomatoes and broth, oregano, sugar and parsley.  Simmer, stirring occasionally for 2 hours.  Be sure to scrape bottom of pan when stirring.  Taste, add more seasonings if needed.  Add green beans, simmer another 30 minutes and then add noodles.  Serve in about 20 minutes, after noodles soften.  Sprinkle with parmesan cheese in individual bowls.

You can also add other veges as well… frozen corn,  sliced carrots. Whatever you want.   I add the carrots sooner to give a change to cook and soften a bit.
