Chinese Chicken Salad - Camille M

2 pkgs Top Ramen (no seasoning)
1 T. oil
2/3 C sliced almonds
¼ C sesame seeds
4 boneless, skinless chicken breasts, cut up
½ small head of white cabbage, shredded
½ head of lettuce, shredded
I can mandarin oranges, drained
¼ C Craisins

Dressing
Mix together the following:
¼ C Soy Sauce
¼ C Vinegar
½ C Oil (1/4 C Vegetable and ¼ C Sesame)
½ C Sugar

Break up Top Ramen, brown in 1 T. oil; add almonds and sesame seeds and brown.  Remove nut mixture and stir fry chicken pieces in same pan.  Just before serving, mix noodle and nut mixture with the cabbage and lettuce.  Add chicken.  Pour dressing over all and serve immediately.
